The first of the Australian Jam has arrived and if the label is anything to go by it sounds delicious. Last year the TIPSY section got the most entries. There is a knack of adding alchohol to jam and some people know how to do it and some dont. I, for one tend to get too much liquid on top which is not what you want to achieve but a taste throughout the jam which doesnt take over the flavour of the fruit. The sort of jam you have on a lazy Sunday morning when you savour every bite as you pile it on your croissant.
